ingredients

  • 2 Siete Grain Free Cassava Flour tortillas
  • avocado oil
  • salt, for sprinkling
  • 1/2 cup coconut flour
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon paprika
  • 1 egg
  • 1 cup water
  • 4 large tomatillos
  • Avocado oil, for frying

Method

  • Step 1

    Preheat oven to 400°F/200°C.

  • Step 2

    Place the two Grain Free Cassava Flour tortillas on a baking sheet lined with parchment paper.

  • Step 3

    Brush both sides of the tortillas with avocado oil and sprinkle with sea salt. Bake for about 10 mins until golden brown.

  • Step 4

    Remove from oven and let it cool. Break the tortilla into large piece and add to a food processor. Pulse until fine (similar to the consistency of bread crumbs).

  • Step 5

    In a small bowl add coconut flour, sea salt, black pepper, and paprika and mix.

  • Step 6

    In a separate small bowl, add 1 egg and ¼ cup water and whisk together.

  • Step 7

    Prepare the tomatillos by removing the husks and slicing them into ½-inch slices.

  • Step 8

    Coat them in the flour mixture, then the egg mixture, then the tortilla crumbs.

  • Step 9

    Add the avocado oil (enough for shallow frying) to a cast-iron skillet over high heat.

  • Step 10

    Once the oil reaches 375°F/190°C, add the tomatillos and cook both sides until golden.

  • Step 11

    Remove from skillet and let sit on a cooling rack.

  • Step 12

    Add more sea salt to taste if desired and enjoy warm!
