ingredients

  • 1 tablespoon avocado oil
  • 1/2 finely chopped white onion
  • 4 garlic cloves, minced
  • 5 cups cauliflower, riced
  • 2 cups water or vegetable broth
  • 1 bunch cilantro
  • 1/4 teaspoon cumin
  • salt and pepper, to taste
  • 1 lime, juiced

Method

  • Step 1

    Heat a large skillet over medium heat. Add avocado oil, onion, and garlic.

  • Step 2

    Sauté until translucent (about 10 minutes).

  • Step 3

    Add the cauliflower and cook for 10 minutes.

  • Step 4

    In a blender, puree water (or vegetable broth, whichever you're using), cilantro, and cumin until smooth. Add to the cauliflower in the skillet and bring to a boil.

  • Step 5

    Uncover and cook over high heat and for 15-20 minutes or until most liquid is absorbed. Adjust seasoning with salt and pepper, if necessary.

  • Step 6

    Fluff with fork and finish with lime juice.
