ingredients
- 2 tbsp avocado oil
- 1/4 white onion, minced
- 1/2 pound brown mushrooms, chopped
- 2/3 cup chopped walnuts
- 1 can chickpeas, drained and rinsed
- 1 tbsp tomato paste
- 2/3 cup water
- 1 package Siete Mild Taco Seasoning
- 1 tbsp apple cider vinegar
- 1 Jar Siete Mild Cashew Queso
- 1 bag Siete Grain Free Dip Chip
Method
Step 1
Add the avocado oil to a large skillet over medium heat. Sauté onions for 5-8 mins until translucent. Increase the heat, and add the mushrooms (make sure to not overcrowd the pan, the mushrooms should sear, not sweat).
Step 2
Add the walnuts and chickpeas.
Step 3
Add tomato paste and stir to combine, adding water to dilute the tomato paste and coat everything. Reduce heat to medium.
Step 4
Add Siete Mild Taco Seasoning and apple cider vinegar.
Step 5
Cook everything together for 5-10 mins.
Step 6
In a separate pan, heat the Mild Cashew Queso over medium until warmed through.
Step 7
Transfer queso to a serving bowl.
Step 8
Add the “chorizo filling” to the center of the bowl of queso. Do not mix together.
Step 9
Serve with Grain Free Dip Chips.
