ingredients
- 4 tbsp avocado oil
- 1 package Siete Mild Taco Seasoning
- 5 medium gold potatoes, cut into wedges
- 3 tbsp avocado oil
- 1 pound ground turkey
- 1 can pinto beans
- 1 Siete Red Enchilada Sauce
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 Jar Dairy Free Siete Mild Nacho Cashew Queso
- salt and pepper, to taste
- green onions, to garnish
Method
Step 1
Preheat the oven to 375°F/190°C.
Step 2
In a large bowl, combine 4 tbsp of avocado oil along with Siete Taco seasoning. Mix to create a paste and toss in potatoes.
Step 3
Bake on a sheet lined with parchment paper and for 30-40 minutes or until fork-tender.
Step 4
Heat a skillet over medium heat, add 3 tbsp of avocado oil and ground turkey.
Step 5
Cook turkey for 10-15 minutes or until completely cooked. Add drained beans and red enchilada sauce.
Step 6
Bring to a simmer and add garlic powder, onion powder, and chili powder. Simmer until the sauce slightly thickens.
Step 7
Heat Cashew queso according to package directions.
Step 8
To serve: Scoop chili sauce over potato wedges and then top with queso. Garnish with thinly sliced green onions.
