- Siete Cassava and Chia Tortillas
- 1/2 cup cream cheese
- 1 tablespoon agave syrup
- 1/2 teaspoon vanilla extract
- 1 peach, cut into thin rounds
- 1/2 cup gluten free oats
- 2 tablespoon melted coconut oil
- 1 tablespoon coconut sugar
- 1 teaspoon cinnamon
- pinch of salt

Method
Step 1
Preheat the oven to 375°F/190°C.
Step 2
Place a chia cassava tortilla on a baking sheet lined with parchment.
Step 3
Mix cream cheese with agave and vanilla extract. Spread ½ of the cream cheese over tortilla.
Step 4
Layer another tortilla over it and spread with the remaining cream cheese.
Step 5
Place thinly sliced peaches over cream cheese.
Step 6
Mix oats with coconut oil, coconut sugar, salt, and cinnamon. Spread over peaches.
Step 7
Bake tart for 25-30 minutes. Let cool before cutting.
Step 8
Serve with a scoop of coconut ice cream in the middle of the tart.
