- 1 pound ground lamb
- 1 tablespoon dried oregano
- 1 teaspoon dried rosemary
- 1 teaspoon ground cumin
- 1 tablespoon dried thyme
- 2 teaspoon salt
- 1/2 teaspoon pepper

dairy-free tzatziki
- 1 cup dairy free plain yogurt
- 2 lemons, juiced
- 1/2 cucumber, peeled and grated
- 1 small garlic clove, peeled and grated
- 1/2 tablespoon extra virgin olive oil
- Pinch of salt

- lettuce leaves

Method
Step 1
Preheat the oven to 375°F/190°C.
Step 2
Combine all ingredients for the meat filling in a bowl.
Step 3
Press the ground meat filling into an 9x13-inch oven-safe dish. Bake for 45 minutes. Drain the excess oil.
Step 4
Cut the meat into thin slices.
Step 5
Make tzatziki by combining all ingredients. Refrigerate until ready to use.
Step 6
Warm cassava tortillas over medium heat.
Step 7
To assemble: place a lettuce leaf in tortilla, then meat, topped with tzatziki, red onions and fresh dill.
