ingredients
- 1 bag Siete Grain Free Salt Tortilla Chips
- 1/2 tsp cayenne pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1 cup tapioca starch
- 3 eggs
- 4 chicken breast
- 1/2 cup butter
- 1/3 Siete Whole30 Approved Traditional Hot Sauce
Method
Step 1
Preheat oven to 400°F/200°C.
Step 2
In a food processor, pulse the Siete Grain Free Sea Salt Tortilla Chips with cayenne, onion powder, garlic powder, paprika until chips are finely crumbed.
Step 3
In a shallow dish, place tapioca starch. In another shallow dish, beat the eggs with ¼ tbsp hot sauce. In a third shallow dish, add seasoned chip crumbs.
Step 4
Slice the chicken in strips to create chicken tenders.
Step 5
Coat chicken tenders with tapioca; dip into the egg mixture, then coat with chip crumb mixture. Place on cookie sheet and bake in preheated oven for 12-15 minutes.
Step 6
In a small saucepot combine hot sauce and butter over low heat and whisk until well combined.
Step 7
Drizzle buffalo sauce over finished chicken tenders and serve with celery and ranch or blue cheese dressing.
