ingredients
- 2 tablespoon avocado oil
- 1 yellow onion, diced
- 3 garlic cloves, minced
- 1 cut into florets broccoli head
- 3 cups vegetable stock
- 1 Jar Siete Mild Nacho Queso
- 1 package Siete Cashew Flour Tortillas
- Pinch of salt and pepper
Method
Step 1
In a medium saucepan, add avocado oil and sauté onions and garlic until onions are aromatic and translucent.
Step 2
Add broccoli and cook together for a few minutes on medium low.
Step 3
Add vegetable stock, just enough to cover broccoli and cook for 10-12 minutes on medium.
Step 4
Add Siete Mild Cashew Queso and cook for another 10 minutes.
Step 5
Using a handheld immersion blender, blend soup until smooth. Season with salt and pepper to taste.
Step 6
Cut the tortillas in 1-inch strips. In a pan lined with parchment, bake tortilla strips for 8-10 minutes or until they have turned golden and crisp.
Step 7
Serve soup with crispy tortilla chips.
