Bananas Foster Crepes

ingredients

  • 4 bananas
  • 1 cup dairy free cream cheese
  • 2 tbsp vegan butter
  • 2 tbsp water
  • 1/2 cup coconut sugar
  • 2 tbsp rum
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • pinch of sea salt
  • (optional) powdered sugar

Method

  • Step 1

    In a food processor, blend one banana with cream cheese.

  • Step 2

    Heat a skillet over medium heat.

  • Step 3

    Slice remaining bananas into small rounds. Add butter, coconut sugar, water and vanilla, nutmeg, cinnamon, salt into skillet and bring to a simmer. Add rum and stir.

  • Step 4

    Add bananas and simmer until they are soft and most of the alcohol in rum has evaporated. About 3-5 minutes.

  • Step 5

    Heat burrito tortilla according to package instructions and then cut in half. Place a small spoonful of the cream cheese mixture inside and fold into a triangle.

  • Step 6

    Pour banana-rum mixture over crêpes.

  • Step 7

    Dust with powdered sugar and enjoy!
