ingredients

  • 1 small head of cauliflower, cut into florets
  • 1 cup Siete Grain Free Nacho Chips, finely ground
  • 1 teaspoon salt
  • 2 eggs
  • 1/4 cup mayonnaise
  • 1 tbsp Siete Jalapeno Hot Sauce
  • 2 teaspoon lime juice
  • salt, to taste

Method

  • Step 1

    Preheat the oven to 400°F/200°C and line a baking sheet with parchment paper.

  • Step 2

    Whisk the eggs in a small bowl and set aside.

  • Step 3

    Place the Grain Free Nacho Chips into a food processor and pulse until chips turn into a fine crumble. Add the salt and set aside.

  • Step 4

    Cut the cauliflower into bite-sized florets. Dip into the egg, then coat with the nacho chip mixture.

  • Step 5

    Arrange on the lined baking sheet, and bake for 20 minutes. Flip over the florets and bake for another 8 – 10 minutes until crispy and golden.

  • Step 6

    In the meanwhile, make the Jalapeño Spicy Mayo. In a small bowl, whisk together the mayonnaise, hot sauce, lime juice, and salt.

  • Step 7

    Remove the cauliflower from the oven and top with fresh cilantro, red onion, and lime wedges. Drizzle Jalapeño Spicy Mayo over the cauliflower and enjoy!
