ingredients

  • 1 cup walnuts, finely chopped
  • 1/2 cup almonds, finely chopped
  • 1/8 cup caster sugar
  • 1 teaspoon ground cinnamon
  • pinch of ground cloves
  • 8 Grain Free Almond Flour Tortillas
  • 1/3 cup melted butter

Syrup Ingredients

  • 3/4 cup sugar
  • 3/4 cup water
  • 1/8 cup honey or agave syrup
  • strip of lemon rind
  • 1 teaspoon lemon juice
  • 1 small cinnamon stick
  • 2 whole cloves

Method

  • Step 1

    Preheat oven to 325°F/160°C.⁠

  • Step 2

    Grease a round pie pan.⁠

  • Step 3

    Mix the nuts, sugar and spices together.⁠

  • Step 4

    Lay the first tortilla in the center of pan, brush with melted butter and add a layer of the nut mixture.⁠

  • Step 5

    Butter remaining tortillas (both sides) and place on top of each other, layering each with nut mixture until you have used up all your filling and tortillas.⁠

  • Step 6

    Use a sharp knife to pre-cut into triangles⁠ Bake for 35 minutes. Prepare the syrup.

Syrup

  • Step 1

    Warm sugar, water and honey over medium heat until sugar dissolves.⁠

  • Step 2

    Add lemon rind, juice, cinnamon bark and cloves. Bring to boil and simmer for 15 minutes.

  • Step 3

    Strain and cool down to thicken. Remove baklava from the oven and spoon syrup on top. Let sit for at least an hour, then serve and enjoy!⁠
