ingredients
- 1 cup walnuts, finely chopped
- 1/2 cup almonds, finely chopped
- 1/8 cup caster sugar
- 1 teaspoon ground cinnamon
- pinch of ground cloves
- 8 Grain Free Almond Flour Tortillas
- 1/3 cup melted butter

Syrup Ingredients
- 3/4 cup sugar
- 3/4 cup water
- 1/8 cup honey or agave syrup
- strip of lemon rind
- 1 teaspoon lemon juice
- 1 small cinnamon stick
- 2 whole cloves
Method
Step 1
Preheat oven to 325°F/160°C.
Step 2
Grease a round pie pan.
Step 3
Mix the nuts, sugar and spices together.
Step 4
Lay the first tortilla in the center of pan, brush with melted butter and add a layer of the nut mixture.
Step 5
Butter remaining tortillas (both sides) and place on top of each other, layering each with nut mixture until you have used up all your filling and tortillas.
Step 6
Use a sharp knife to pre-cut into triangles Bake for 35 minutes. Prepare the syrup.
Syrup
Step 1
Warm sugar, water and honey over medium heat until sugar dissolves.
Step 2
Add lemon rind, juice, cinnamon bark and cloves. Bring to boil and simmer for 15 minutes.
Step 3
Strain and cool down to thicken. Remove baklava from the oven and spoon syrup on top. Let sit for at least an hour, then serve and enjoy!
