ingredients
- 1 granulated sugar, extra fine
- 6 tablespoons margarine or butter, cubed into 6 pieces
- 1/2 cup heavy cream
- 1 teaspoon table salt
Method
Step 1
Heat sugar in a saucepan over medium heat, stirring constantly.
Step 2
Sugar will eventually form clumps and then melt into a amber-colored liquid as you continue to stir.
Step 3
When sugar is completely melted, immediately stir in the butter until melted and combined. (Be careful! The mixture will bubble rapidly!)
Step 4
Once the butter or margarine has melted and mixed in well - slowly pour in the heavy cream and stir well until combined. * For a thinner caramel, add 2 extra tbsps of heavy cream.
Step 5
Once the cream is entirely incorporated, allow mixture to boil for a minute.
Step 6
Turn off heat and stir in the salt. * For a sweet caramel sauce, omit salt. Allow to cool slightly before using. The sauce thickens into a chewy consistency when cool. For a liquid consistency, simply reheat.
