ingredients
- 1 box Carrot Cake Mix
- 4 overripe and mashed frozen bananas (thawed)
- 2 tablespoons juices from thawed bananas
- 2 large eggs + zest
- 1/3 cup vegetable oil
- 1 teaspoons ground mixed baking spices
- 1 teaspoons dark vanilla essence
- 3/4 cup semi-sweet chocolate chips
- 1/2 cup sliced almonds
- 1 overripe banana, fresh & sliced lengthways
Method
Step 1
Mix together bananas, eggs, oil, zest, vanilla and cake mix in a large bowl. Your batter should be slightly thicker than pancake batter and lumpy with chunks of bananas - add 1-2 tbsps of juices if needed. Mix well to combine. * Drain your thawed bananas before mashing, keeping the natural juices set aside. Only add juices 1 tbsp at a time if needed to achieve ideal consistency.
Step 2
Add your chocolate chips and almonds - fold in. Add ins can vary - from fresh berries to sweet coconut bits.
Step 3
Pour into a greased 9x5 loaf pan, top with additional almonds, chocolate chips, bananas slices. Bake for 50-60mins at 350F / 180C.
Step 4
Allow to cool for a few minutes before removing from pan. Top with my buttery salted caramel sauce and enjoy!
