One of my favorite things about fall is acorn squash - and this middle eastern spiced squash and dip combination do not disappoint!!

ingredients
Spiced Acorn Squash
- 1 medium/large acorn squash
- 2 tablespoons avocado oil
- 4 minced garlic cloves
- Generous pinch of salt
- 2 tablespoons aleppo pepper
- 2 tablespoons za'atar
Method
To Roast the Squash
Step 1
Start by preheating oven to 425F.
Step 2
Cut the squash in half, remove the seeds, and then roughly cut them. You want these to be about 1/4 to 1/3 inch thick so they cook evenly
Step 3
Add the acorn squash to a bowl and add avocado oil, minced garlic cloves, a pinch or two of salt, aleppo pepper, and za'atar. Then give it a really good mix.
Step 4
Grab a baking sheet with wire rack and place the acorn squash over the rack, with ample space apart from each other.
Step 5
Put in the oven at 425F for 30-35 minutes. Time varies by oven.

Dipping Sauce
- 2 1/2 tablespoons mayo
- 1 tablespoon thick plain Greek yogurt
- 2 minced garlic cloves
- 1 teaspoon smoked paprika
- Lemon juice, to taste
To make the Dipping Sauce
Step 1
While the squash cooks, prepare the dipping sauce. In a small bowl add mayo, Greek yogurt, minced garlic cloves, smoked paprika, and a couple squeezes of lemon juice. Give a good mix, then feel free to adjust as you want.
