ingredients

  • 3 very ripe bananas, mashed, plus 1 banana halved
  • 1/2 cup sunflower oil
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1/6 cup chopped almonds, plus more to top
  • 1/6 cup sunflower seeds, plus more for topping
  • 1/3 cup chocolate chips, plus more for topping

Method

  • Step 1

    Preheat oven to 350ยบF. Grease or line a loaf pan with parchment paper.

  • Step 2

    In a large bowl, mix together the bananas, sunflower oil, sugar and vanilla.

  • Step 3

    In a separate bowl, combine the flour, baking powder, baking soda, cinnamon and salt.

  • Step 4

    Add half of the dry ingredients to the wet ingredients, and mix together until combined. Add the chopped almonds, sunflower seeds and chocolate chips to the remaining dry ingredients and mix to coat. Add to the batter and mix gently, being careful not to overmix ( Itโ€™s okay if the mixture is a bit lumpy).

  • Step 5

    Transfer the batter to the loaf pan and top with the two banana halves cut side up. Scatter almonds, sunflower seeds and chocolate over the top. Bake for 40 minutes or until a toothpick inserted comes out clean.
