lentil bolognese. i suppose you could think of this as a meatless riff on the classic ragu, but that would do injustice to this gorgeously earthy, fabulously flavorsome sauce that takes advantage of a few humble vegetables and legumes and slow cooking. recipe by @nigelslater, from Eat: The Little Book of Fast Food, also on @guardian_cook / @obsfood. i was tempted to add some tomato puree or dried porcini, which would add extra flavor, but the sauce was really delicious as it was, although i did threw some chopped celery. also, i added a bunch of herbs and a glug of wine along with water; it's my usual trick when i don't have a vegetable stock ready to use.
