  • 8 (4 ounce) burger patties
  • 1 red bell pepper, sliced `
  • 1 yellow bell pepper, sliced `
  • 1 orange bell pepper, sliced `
  • 1 green bell pepper, sliced `
  • 1 yellow onion, sliced `
  • 1 tablespoon Salt and Pepper Blend seasoning, divided
  • 1 tablespoon onion powder, divided
  • 1 tablespoon garlic powder, divided
  • 2 teaspoons homemade BBQ rub (Pasilla powder, chili powder, paprika, chipotle powder, cumin, cayenne pepper, brown sugar, salt, and pepper - a pinch of each, ~1/8 tsp)
  • 8 slices cheddar cheese
  • 4 Dutch crunch rolls
  • Handful of hickory smoked chips

Method

  • Step 1

    Set up a charcoal grill and add soaked hickory chips for additional flavor.

  • Step 2

    Slice the onion and peppers evenly. Season with 1/2 of the Salt and Pepper Blend seasoning, onion powder, garlic powder, and 1 teaspoon of the homemade rub. Toss to coat evenly.

  • Step 3

    When the grill reaches about 350°F, add the seasoned onions and peppers in a grill pan or basket. Place on the BBQ grill and cover with the lid. Flip and toss every 5 minutes until fully caramelized.

  • Step 4

    Season the burger patties with the remaining seasonings and spices.

  • Step 5

    Grill the burger patties for about 2 1/2 minutes on each side. Add cheese in the last minute of grilling. Remove the patties and add them to a cutting board along with the caramelized onions and peppers.

  • Step 6

    Just before chopping and combining the patties, onions, and peppers, place the Dutch Crunch rolls on the grill, sliced side down. Close the lid and grill for 2 minutes.

  • Step 7

    Garnish the toasted rolls with your preferred condiments, add the chopped meat and peppers, and more cheese if desired. Add fresh lettuce and tomato if you prefer. Enjoy with homemade pickles or banana peppers for an extra kick.
