Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1 Honeycrisp apple, sliced `
  • 1/3 of a small wheel of Brie

Maple Glaze:

  • 2 tablespoons maple syrup
  • 2 teaspoons olive oil
  • 1 sprig of fresh thyme (or 1/2 tsp dried thyme)
  • 2 heaping teaspoons minced garlic
  • salt and pepper, to taste

Method

  • Step 1

    Preheat the oven to 400°F.

  • Step 2

    Lay the chicken breasts flat and carefully butterfly each breast, making an incision about 3/4 of the way through. Season both sides of the chicken with salt and pepper.

  • Step 3

    In a cast-iron skillet over medium-high heat, melt the butter until it is frothy. Add the chicken breasts to the skillet and sear for approximately 3 minutes on each side. Once seared, remove the chicken from the skillet and set it aside.

  • Step 4

    In the same skillet, add the apple slices and Brie cheese slices, arranging them between the butterflied chicken breasts. Secure the filling with kitchen twine or toothpicks if desired.

  • Step 5

    In a separate bowl, combine the maple syrup, olive oil, thyme, minced garlic, salt, and pepper for the glaze. Whisk the ingredients until thoroughly combined. Use a pastry brush to generously coat both stuffed chicken pieces with the glaze.

  • Step 6

    Place the skillet in the preheated oven and bake the chicken for 20-25 minutes or until the internal temperature reaches 165°F. Allow the outer edges to brown and crisp slightly.

  • Step 7
