ingredients

Miso butter

  • 1/2 stick softened butter
  • 2 tablespoons room temperature miso paste
  • 1 clove minced garlic

Method

Miso butter

  • Step 1

    Combine all ingredients in a food processor until smooth.

  • Step 2

    Place in airtight container and keep in the fridge for up to three months.

  • Step 3

    Set aside until ready to use.

Sweet and spicy sauce

  • 3 tablespoons liquid aminos (or gluten free soy sauce)
  • 1 tablespoon minced garlic
  • 1 tablespoon agave nectar
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons red chili paste

Sweet and spicy sauce

  • Step 1

    Whisk all ingredients together in a bowl. Taste, and adjust to preference.

  • Step 2

    Set aside until ready to use.

Salmon and veggies

  • 1 pound salmon, cut in two
  • salt and pepper to taste
  • 1 tablespoon olikve oil
  • 1 small bunch broccolini
  • 6 small carrots, peeled.
  • 2 cloves crushed garlic
  • additional for serving chili paste
  • 1 teaspoon sesame oil, for serving
  • Spring onion, for garnish
  • toasted sesame seeds, for garnish
  • chopped roasted peanuts, for garnish

Salmon and veggies

  • Step 1

    Rinse salmon, and pat dry with kitchen towel. Season both sides with salt and pepper. Preheat oven to 350.

  • Step 2

    Heat olive oil in cast iron or oven safe pan on medium heat, and sear salmon skin side up to just get color. Flip, and crisp skin lightly. Remove from pan and set aside. (will finish cooking in the oven)

  • Step 3

    Add carrots, and crushed garlic to pan. Top with a few spoonfulls of miso butter, and toss in pan to coat.

  • Step 4

    Add broccolini, and a splash of apple cider vinegar to deglaze pan. (will smoke, it's ok!) toss veggies around and use wooden spoon to scrape up flavor bits from pan.

  • Step 5

    return salmon to pan, skin side down. Pour over sweet & spicy sauce... use brush to get sauce from pan onto salmon, tap in.

  • Step 6

    Turn heat off, add additional miso butter onto of carrots and transfer to oven for about 15 minutes, so carrots can soften and salmon can finish cooking.

  • Step 7

    Serve with additional chili oil, chopped peanuts if desired, fresh chopped scallions, and toasted sesame seeds.
