ingredients

  • 1 1/2 pounds chicken wings
  • 1 teaspoon diamond crystal kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup corn starch
  • 1 teaspoon avocado oil (or a good spray of cooking oil!)
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/4 cup liquid aminos (or gluten free soy sauce)
  • 1 1/2 ounces truffled honey (by truffleist)
  • truffled salt (by truffleist), to finish

Method

  • Step 1

    Preheat oven to 300.

  • Step 2

Toss chicken wings in salt, pepper, and corn starch.

  • Step 3

Shake off excess, and place on a backing sheet with a wire rack.

  • Step 4

Drizzle with oil, or give a very generous spray with cooking oil.

  • Step 5

Bake for 10 minutes, and increase oven temp to 375.

  • Step 6

Bake for an additional 20-30 minutes, flipping halfway through... until skin has turned golden and crispy.

  • Step 7

Remove from oven, and allow to cool while you make the sauce.

  • Step 8

In a sauce pan, combine butter, garlic powder, brown sugar, apple cider vinegar, liquid aminos, and truffled honey.

  • Step 9

Stir frequently on low until sauce begins to thicken enough to show the bottom of the pan when scraped with rubber spatula.

  • Step 10

Allow sauce to cool slightly, and pour over chicken wings. Toss to coat.

  • Step 11

Finish with a dusting of truffled salt (optional but encouraged)
