Spring noodles and candied cashews

ingredients

Chicken and noodles

  • 2 squares lotus foods rice ramen (or desired ramen style noodle)
  • 1 tabelspoons unsalted butter
  • 1/2 tabelspoons olive oil
  • 1 pound ground chicken
  • 2 cloves minced garlic
  • 1 medium minced shallot
  • 1 teaspoon minced ginger
  • 2 teaspoons red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon white pepper
  • 1 teaspoon paprika
  • salt and pepper, to taste
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons brown sugar
  • 1/2 lemon, juiced

Method

Chicken and noodles

  • Step 1

    Bring salted water to boil, and cook noodles according to package instructions. Drain, rinse with cool water and set aside.

  • Step 2

    In a deep walled pan or pot, heat butter and olive oil.

  • Step 3

    Add ground chicken, and seasonings (not brown sugar yet!). Break up with wooden spoon, and cook to brown.

  • Step 4

    Add the shallot, garlic, and ginger. Cook until fragrant and slightly softened. Add apple cider vinegar to deglaze pan, and scrape up browned bits from pan bottom.

  • Step 5

    Add brown sugar, and toss to coat. Turn heat to low, and allow meat and sugar to caramelize lightly.

  • Step 6

    Taste, season with additional salt and pepper if needed. Set aside until ready to assemble dish.

Basil mint pesto

  • 1 bunch fresh mint leaves
  • 1 bunch fresh basil leaves
  • 1 cup spinach
  • 1 clove minced garlic
  • 1/4 cup olive oil
  • salt and pepper, to taste

  • Step 1

    Roughly chop fresh ingredients, and add to food processor with olive oil, salt and pepper.

  • Step 2

    Process to desired texture. Adjust salt and pepper as needed. Set aside until ready to use.

Candied cashews

  • 1 cup roasted cashews
  • 2 tablespoons brown sugar
  • 1 tablespoon butter
  • 1 tablespoon water
  • flaky salt

Candied cashews

  • Step 1

    In a skillet, toss all ingredients together to melt butter and caramelize sugar. Once thickened, remove from heat and transfer to a parchment lined baking sheet.

  • Step 2

    Sprinkle with flaky salt while still sticky. Allow to cool slightly, and transfer to oven under preheated broiler for 2-3 minutes, watch carefully to avoid burning.

  • Step 3

    Allow to cool completely, and shatter sugar to release cashews.

Assembly

  • Step 1

    Toss together noodles, and pesto. Add a squeeze of lemon juice.

  • Step 2

    You can add chicken right into the noodles and toss together, or in bowls individually.

  • Step 3

    Top each bowl with candied cashews, and get a little bit of that broken caramelized sugar in as well.

  • Step 4

    You can also choose to serve this dish warm, but I promise, chilled is where it's at.
