ingredients
- 1 gluten free baguette (this one is by GreenLite found at Whole Foods)
- 1 cup chopped spinach
- 3 cloves minced garlic
- 1 small diced yellow onion
- 8 ounces softened cream cheese
- 7 ounces feta cheese
- 1/2 cup chopped artichoke hearts
- 1 teaspoon olive oil
- parmesan, for garnish
Method
Step 1
Preheat oven to 350.
Step 2
In a bowl, whisk together cream cheese, and feta cheese.
Step 3
Add spinach, garlic, onion, and artichoke hearts. Fold to combine.
Step 4
Slice baguette in half, or thirds. Scoop out the center of the bread, careful to keep the outside in tact.
Step 5
Use a spoon or rubber spatula to stuff the spinach mixture into the baguette.
Step 6
Place on a foil lined baking sheet, pressing cut pieces back together.
Step 7
Drizzle with olive oil, and wrap gently in foil. Bake for 5 minutes. Undo foil, and continue to bake for another 5-10 minutes until golden brown.
Step 8
Top with fresh grated parmesan cheese, slice and serve.
