ingredients
- 1 1/4 pounds baby red potatoes
- 1 pound small gold potatoes
- 1/2 cup diamond crystal kosher salt (1/4 if using Morton)
- 1/2 cup mayonaise
- 3/4 cup sour cream
- 1 tablespoon onion powder
- 1 tablespoon white wine vinegar
- 1 bunch chopped green onion
- 1 chopped shallot
- 1 small chopped red onion
- salt and pepper, to taste
- 1 teaspoon dried dill
- 1 bag crushed sour cream and onion potato chips for garnish
Method
Step 1
In a large pot, add potatoes and salt. Cover with water. Boil until fork tender. Reserve a little of the boiling water for later. Set aside to cool slightly.
Step 2
In a large bowl, mix together all other ingredients (minus the chips)
Step 3
Fold in potatoes, and gently break apart with a wooden spoon to desired consistency.
Step 4
If it feels too thick, you can add that reserved boiling water to thin it up a bit, it will have a nice salty flavor, too :)
Step 5
Taste, adjust salt and pepper as needed.
Step 6
When ready to serve, top with more green onion, shallot, and crushed potato chips.
