ingredients

Skillet drop biscuits

  • 2 cups gluten free flour (I like King Arthur)
  • 1 tablespoon baking powder
  • 1 teaspoon diamond crystal kosher salt
  • 1 teaspoon everything bagel seasoning (or whatever herb/spice mix you like!)
  • 1 tablespoon fresh chopped chives
  • 1 stick cold unsalted butter
  • 3/4 cup buttermilk
  • butter, for greasing the pan

Method

  • Step 1

    Preheat oven to 450.

  • Step 2

    In a large bowl, mix together flour, baking powder, salt, EB-seasoning, and chives.

  • Step 3

    Drop butter in, and use a dough blender, or two forks to work into dough. Once a little bit smaller than pea sized pieces result- you're done.

  • Step 4

    Pour in buttermilk, and use rubber spatula to form the dough. (you can use your hands too, but quickly! you don't want to melt the butter)

  • Step 5

    Grease a cast iron pan with butter, drop dough by spoonfuls into pan (they can be touching a little, or not!)

  • Step 6

    Bake for 20-25 minutes, until golden brown on top.

  • Step 7

    Top with sausage gravy (if using), and serve!

Sausage gravy

  • 1 teaspoon avocado oil
  • 16 ounces mild chicken sausage
  • 4 tablespoons unsalted butter
  • 1 teaspoon Worcestershire sauce
  • 4 tablespoons gluten free flour
  • 2 1/2 cups half and half
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon white pepper
  • 1 teaspoon diamond crystal kosher salt
  • 1 teaspoon black pepper

Sausage gravy

  • Step 1

    Heat a pot on medium, add avocado oil to shimmering (if using pork sausage, you won't need to add the oil)

  • Step 2

    Add chicken sausage, and break up with wooden spoon. Cook until browned all over, and remove from pot.

  • Step 3

    Drop in butter (again, if using pork sausage, you might not need to do this if there is enough residual fat!)

  • Step 4

    Add Worcestershire sauce to deglaze, scraping up browned bits from bottom of the pan.

  • Step 5

    Add flour, and whisk in for about 2-3 minutes.

  • Step 6

    Slowly stream in half and half (or milk), whisking constantly until thickened.

  • Step 7

    Add spices, and seasonings. Return chicken sausage to pan.

  • Step 8

    Stir together, taste. Add salt/pepper as needed.
