Sheet pan shawarma chicken

ingredients

  • 2 chicken breasts
  • 1 teaspoon kosher salt
  • 1 teaspoon ground ginger
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon all spice
  • 1 teaspoon ghee oil, or olive oil
  • 1 halved yellow onion
  • 4 baby red peppers
  • 1 bulb of garlic
  • gluten free tortilla for serving
  • 1/2 cup plain greek yogurt
  • fresh tarragon
  • fresh mint
  • a handful of chopped romaine
  • 1 lemon,

Method

  • Step 1

    Preheat oven to 350, place baking sheet inside lined with foil. (preheating the pan as well)

  • Step 2

    Combine spices and seasoning in a bowl, set aside.

  • Step 3

    Cut chicken into small strips. About 1/2" pieces.

  • Step 4

    Toss chicken with spice mix. Place carefully on heated baking sheet.

  • Step 5

    Cut the top off garlic, and set cut side up on pan.

  • Step 6

    Add onion, cut side down to pan.

  • Step 7

    Add peppers, Drizzle everything with ghee oil or olive oil.

  • Step 8

    Bake 20-35 minutes until chicken is cooked through. Garlic may need a little more time on its own.

  • Step 9

    When garlic has softened, squeeze the cloves into a food processor with yogurt. Process until smooth.

  • Step 10

    Assemble wraps with gluten free tortilla, layer of the yogurt, lettuce, chicken and veggies, and top with fresh mint and tarragon. Serve with additional yogurt sauce, and a squeeze of lemon juice.
