Sheet pan fajita chicken

ingredients

  • 1 tabelspoons kosher salt
  • 1 teaspoon cayenne pepper
  • 1 tablespoon coriander
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon chili powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon oregano
  • 1/2 lemon, zested
  • 4 cloves crushed garlic
  • 1 cup sliced bell peppers
  • 1 sliced red onion
  • 1 bunch chopped green onion (bases) tops for garnish
  • 1 tablespoon olive oil
  • 2 chicken breasts
  • parsley, for garnish

Method

  • Step 1

    Preheat oven to 350, place foil lined baking sheet in oven while heating.

  • Step 2

    In a bowl, combine spices and seasonings, and zest of half a lemon. (This will get sprinkled over the chicken, and then used to make a sauce! so don't toss the excess.)

  • Step 3

    On preheated sheet pan, toss garlic, onion, peppers, and green onion together with olive oil and a pinch of salt.

  • Step 4

    Place chicken breasts ontop of veggies, and season both sides with the spice mix. Drizzle with olive oil, and bake for about 20 minutes until chicken has cooked through.

  • Step 5

    Remove from oven, and allow to cool for about ten minutes, then shred the chicken using two forks.

  • Step 6

    Combine remaining spice mix with a few tablespoons of water- to create a saucy consistency. (maybe 2-3 tablespoons!) And pour over chicken/veggies. Return to oven for 3-5 minutes to absorb flavor.

  • Step 7

    Serve with rice, on salad, in tacos, or on its own with some shredded cheese. I had leftover birria broth from a previous recipe. I served with that, and rice! Broth recipe is a few posts back!
