ingredients

Chicken

  • 4 boneless, skinless chicken thighs, Cut chicken into 1 inch pieces
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • 1/2 cup gluten free all purpose flour, plus more as needed
  • 1/2 cup corn starch, plus more as needed
  • Neutral oil, for frying

ingredients

Sesame Sauce

  • 1 teaspoon peanut or vegetable oil
  • 1 clove garlic, minced
  • 1/4 cup honey
  • 1/2 cup liquid aminos (or gluten free soy sauce)
  • 1/2 cup ketchup
  • 4 tablespoons brown sugar
  • 2 1/2 tablespoons rice vinegar
  • 1 tablespoon sesame oil (plus more for serving)
  • 2 teaspoons corn starch
  • 2 tablespoons sesame seeds
  • Scallions (green parts only) or chives, sliced, for serving
  • Cooked rice, for serving

Method

Chicken

  • Step 1

    In a shallow bowl, whisk egg with salt and pepper. I a separate bowl, combine flour and cornstarch.

  • Step 2

    In a deep frying pan or dutch oven, heat oil to 350ºF.

  • Step 3

    Dredge the chicken pieces in the egg first, then in the flour and cornstarch mixture.

  • Step 4

    Fry 7-9 pieces of chicken at a time in the hot oil for 5-7 minutes until cooked through.

  • Step 5

    Transfer cooked chicken to a paper towel lined plate.

Sesame sauce

  • Step 1

    In a medium bowl, combine together brown sugar, honey, ketchup, sesame oil, rice vinegar, liquid aminos (or gluten free soy sauce), and corn starch. Whisk until combined.

  • Step 2

    In a large pan, heat teaspoon of oil. Add garlic, and sauté until fragrant (about 1-2 minutes).

  • Step 3

    Add sesame sauce, and cook stirring frequently until just thickened.

  • Step 4

    Lower heat and add the fried chicken pieces to the sauce. Add half of the sesame seeds and toss to coat.

  • Step 5

    Serve over cooked rice and garnish with additional sesame seeds and sliced scallions.
