"Okay we all know "those" biscuits. You either think they're the best thing since sliced bread... or you're like me and think "I can make this better at home" :X (sorry RL no shade) SO here's my gluten free/keto spin on red lobster's biscuits."

ingredients

Biscuits

  • 2 room temperature eggs
  • 2 tablespoons room temperature cottage cheese
  • 2 tablespoons melted unsalted butter
  • 1 cup finely ground almond flour (Trader Joe's makes the best!)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt (I prefer diamond crystal)
  • 1 tablespoon dried chives
  • 1 cup freshly shredded mild cheddar

Method

Biscuits

  • Step 1

    Preheat oven to 400.

  • Step 2

    In your first bowl, mix together eggs, cottage cheese (trust me, even if you don't like it *I don't* it's gonna assist in the rising of the dough!) and melted butter.

  • Step 3

    In a second bowl, mix together dry ingredients (almond flour, baking powder, salt, and dried chives) create a well in the center, and pour in the egg mixture.

  • Step 4

    Use a rubber spatula to fold together until just combined.

  • Step 5

    Add cheddar cheese, and fold in to evenly distribute.

  • Step 6

    Use a cookie scoop (or spoon) to drop 1" rounds onto a parchment lined baking sheet.

  • Step 7

    Bake for 12-14 minutes until golden brown.

  • Step 8

    Remove from oven, and brush with parmesan chive butter. Return to oven (off) until ready to serve.

  • 2 tablespoons melted unsalted butter
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried chives
  • 1 teaspoon finely grated parmesan

  • Step 1

    Mix all ingredients together well. Brush on biscuits while warm, and return to oven to set.
