Chicken salad

  • 1 1/2 pound chicken (breasts or tenders)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground mustard powder
  • 1/2 teaspoon dried dill
  • 2 tablespoons dijon mustard
  • 1 tablespoon minced garlic
  • 1 cup prosecco (enough to half cover chicken)
  • 1/4 cup chopped pistachios
  • 1 minced shallot
  • 1/4 cup chopped green onion
  • 1/4 cup chopped basil
  • chopped chives, for serving
  • sliced strawberries, for serving

Method

Chicken salad

  • Step 1

    Place chicken in crockpot. Add salt, pepper, garlic powder, onion powder, ground mustard, minced garlic, dried dill, dijon mustard.

  • Step 2

    Add Prosecco to half cover the chicken.

  • Step 3

    Spread the spices/mustard mixture out over the chicken a bit with a rubber spatula.

  • Step 4

    Cover and cook on high for about 2.5-3 hours until chicken reaches 165º (or on low for double the time)

  • Step 5

    Use a hand mixer (or two forks) to shred chicken. Add chopped pistachios, green onion, shallot and basil.

  • Step 6

    Leave lid off, and reduce heat to low. Mix up dressing in this time. (if making dressing ahead of time, allow chicken to simmer with lid off for about 5 minutes to remove additional moisture)

  • Step 7

    Mix in dressing, serve with slices of strawberry and fresh chives.

  • 1 lemon
  • 1 tablespoon minced garlic
  • 2 tablespoons dijon mustard
  • 1/2 cup mayonnaise
  • 1/4 cup avocado (or olive) oil
  • 1/2 teaspoon each salt and pepper

    Combine all ingredients in a jar, and shake well to combine.
