Squash

  • 1 spaghetti squash
  • 1 large chopped shallot
  • 2 cloves chopped garlic
  • 1 tabelspoons olive oil, divided
  • 1 teaspoon chicken seasoning
  • salt and pepper

Method

Squash

  • Step 1

    Poke spaghetti squash with a fork all over. Microwave for 8 minutes, and allow to cool slightly. This will make cutting squash easier.

  • Step 2

    Preheat oven to 350.

  • Step 3

    Carefully cut squash in half, and remove seeds.

  • Step 4

    Salt and pepper squash, and sprinkle with chicken seasoning... (I used zehnders, but your fav' will work perfectly!) or, use garlic/onion/turmeric/sugar/paprika mixed together!

  • Step 5

    Drizzle with olive oil. Place flat side down on a foil lined baking sheet. Bake for 30 minutes while you prepare the chicken, and garlic/shallot.

  • Step 6

    Heat a little oil or butter in a pan, cook shallot and\ garlic together on low until lightly caramelized. Set aside until ready to use.

  • Step 7

    After 30 minutes, remove squash from oven, flip and use forks to shred out the "noodles". Add garlic and shallot, toss together in squash shells.. bake for another 10 minutes.

  • 2 chicken cutlets
  • 1 cup gluten free pretzels
  • 1 teaspoon chicken seasoning (see above notes)
  • 1/4 teaspoon cayenne (optional)
  • 1 teaspoon olive oil
  • 2 beaten eggs

Chicken

  • Step 1

    Crush pretzels in a bag, and transfer to bowl. Add seasonings and toss together.

  • Step 2

    Dredge chicken through eggs, and press into pretzel coating. Use. a little pressure to make sure the pieces stick onto the chicken.

  • Step 3

    Transfer to a baking sheet with a rack. Drizzle with olive oil, and. bake for 17-20 minutes until chicken is cooked through and crust has browned.

  • 2 tablespoons dijon mustard
  • 1 tablespoon grainy mustard
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1 1/2 teaspoons olive oil
  • 2 tablepoons heavy cream
  • salt and pepper
  • sun-dried tomatoes, to serve

Sauce

  • Step 1

    Combine mustards, apple cider vinegar and honey in a bowl.

  • Step 2

    Add olive oil slowly, whisking constantly to incorporate smoothly.

  • Step 3

    Add heavy cream, and salt and pepper to taste.

Assembly and serving

  • Step 1

    In a shallow bowl or plate, layer first sauce. Then "noodles" removed from squash.

  • Step 2

    Add slices of chicken. Fresh chives, and sun-dried tomatoes with oil.

  • Step 3

    Additional sauce, and flaky salt. Serve warm.
