ingredients
- 1 cup warm water
- 1 1/2 teaspoons kosher salt
- 1 1/2 teaspoons sugar
- 1 1/4 teaspoons active dry yeast
- 1 1/2 tablespoons olive oil
- 2 1/4 cups gluten free flour
- 2/3 cup baking soda
- 1 whisked egg
- flaky salt, for topping
- 3 tablespoons melted butter
- 8 ounces cubed velvet cheese
- 4 ounces milk
Method
Step 1
Preheat oven to 400.
Step 2
In the bowl of a stand mixer, combine warm water, sugar, and kosher salt.
Step 3
Add yeast, and give a gentle mix. Allow to activate for a few minutes, until foam begins to appear.
Step 4
Add olive oil, and flour to bowl. Mix on medium until dough begins to form.
Step 5
Remove dough from bowl, and shape gently into a ball.
Step 6
Transfer to an oiled bowl, cover with plastic wrap. Set ontop of oven to rise for one hour.
Step 7
Cut dough into four pieces, and roll into cylinders on cutting board. Cut cylinders into about 1" pieces.
Step 8
Bring a pot of water to boil, and add baking soda.
Step 9
Carefully drop in dough bits, stir gently and boil for about 3 minutes.
Step 10
Remove from water, and place onto a parchment lined baking sheet.
Step 11
Brush pieces with beaten egg, and top with flaky salt.
Step 12
Bake for 15 minutes, until golden brown.
Step 13
Toss baked pieces through melted butter, and return to baking sheet, and into oven for 2-5 minutes.
Step 14
Serve with your favorite sauce. Mine, made by placing cheese and milk in a sauce pan- stirring until cheese is melted and sauce is thickened.
