Peanut butter pretzel stuffed brownies

ingredients

  • 3/4 cup unsalted butter
  • 8 ounces rough chopped bakers chocolate
  • 2 cups sugar
  • 3 room temperature eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon diamond crystal kosher salt (1/2 if using morton)
  • 1 cup dutch process cocoa powder
  • 1 cup gluten free flour
  • 12 gluten free pretzels
  • 1/4 cup creamy peanut butter

Method

  • Step 1

    Preheat oven to 350.

  • Step 2

    Melt butter, and 4 ounces of chopped chocoalte together in microwave in 20 second intervals. Stir each time, until melted together and no clumps remain.

  • Step 3

    (You can use a hand, or stand mixer for this recipe. If you're using a hand mixer... melt butter and chocolate in a large enough bowl to continue)

  • Step 4

    Transfer melted butter/chocolate to the bowl of a stand mixer (if using) and whisk in sugar to dissolve.

  • Step 5

    One at a time, whisk in three eggs. Whisk for abotu 2 minutes each to fully incorporate.

  • Step 6

    Whisk in vanilla.

  • Step 7

    Whisk in flour, cocoa powder, and salt. Then the remaining chopped chocolate.

  • Step 8

    Add half of batter to a rectangular baking dish lined with parchment paper (hanging over the edge, to make removal easy!)

  • Step 9

    Spread batter out with an offset spatula (batter will be pretty thick, so it will take a minute.)

  • Step 10

    Spread peanut butter over top of batter. Add pretzels (if using) and then cover with remaining batter.

  • Step 11

    Bake for 30-35 minutes, until toothpick comes out clean.

  • Step 12

    Top with crushed pretzel pieces, and flaky salt while still warm. Allow to cool for 15-20 minutes before slicing.
