ingredients
- 3/4 cup gluten free baking flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 softened stick of butter
- 1/2 cup cane sugar
- 1/4 cup brown sugar
- 1 egg
- 1/2 cup peanut butter
- 1 teaspoon vanilla
- 1 cup old fashioned rolled oats
- 1/2 cup Chocolate chips
Method
Step 1
Combine dry ingredients in a bowl. Set aside.
Step 2
Use hand mixer to cream together butter and sugars. Mix in vanilla, and egg.
Step 3
Add peanut butter, and mix to combine well. Add chocolate chips.
Step 4
Add dry ingredients to peanut butter mixture. And mix to combine, scraping down sides of bowl as needed.
Step 5
Finally mix in the oats. Chill in fridge for at least 40 minutes. When ready to bake, preheat oven to 350.
Step 6
Bake for 13-15 minutes on parchment lined baking sheet, until golden brown. Allow to cool for 10 minutes on the baking tray. **If desired, heat Nutella in microwave for 15 seconds, and dip cookies in, dust with flaky salt and let chill in the fridge until Nutella has hardened. **
