ingredients

Peanut butter frosting

  • 1/2 stick softened butter
  • 4 ounces softened cream cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoon or more to desired consistency heavy whipping cream
  • 2 tablespoon or more to taste creamy peanut butter
  • 1/2 cup or more to desired consistency powdered sugar

Method

Peanut butter frosting

  • Step 1

    Add butter, cream cheese, and vanilla to a bowl. Use hand mixer to combine well.

  • Step 2

    Add heavy whipping cream, and peanut butter and mix again.

  • Step 3

    Add powdered sugar, and mix to combine to a smooth texture so no clumps remain. Add additional heavy whipping cream, or powdered sugar to alter consistency if necessary.

  • Step 4

    Chill in fridge until ready to use.

Stuffed brownies

  • 1 cup cane sugar
  • 1/4 cup brown sugar
  • 3/4 cup cocoa powder
  • a pinch of salt
  • 1 stick cooled to room temperature melted butter
  • 1 teaspoon vanilla extract
  • 2 room temperature eggs
  • 1/3 cup gluten free baking flour (such as Bob's Red Mill)
  • 9 gluten free oreo/alternative
  • 9 reese's peanut butter cups

Stuffed brownies

  • Step 1

    In a bowl, combine sugars, cocoa powder, and salt. Whisk to combine.

  • Step 2

    Add melted butter, and vanilla and whisk to incorporate.

  • Step 3

    Add eggs, one at a time whisking about 2 minutes each.

  • Step 4

    Finaly, add flour and whisk until just combined.

  • Step 5

    In a parchment lined square baking dish, Add 1/3 of the batter to coat the bottom.

  • Step 6

    Add an oreo/alternative cookie to each "future brownie square" Layer another 1/3 of batter ontop. (it doesn't have to be perfect!)

  • Step 7

    Add a reese cup onto each square. Cover with the remaining batter, spreading to cover. (again, doesn't have to be perfect! they'll taste amazing no matter what!)

  • Step 8

    Bake at 325 for about 35 minutes. Allow to cool completely before moving onto the next step... about 15 minutes.

  • Step 9

    Cover with peanut butter frosting, slice, and serve!
