No-Bake mini guava cheesecakes

ingredients

Graham cracker crust

  • 1 cup finely crushed graham crackers
  • 2 tablespoon plus 2 teaspoons brown sugar
  • 1/4 cup melted butter

Method

Graham cracker crust

  • Step 1

    Use food processor to finely crush graham crackers (1 cup after processing!)

  • Step 2

    Add brown sugar, and melted butter. Mix to combine.

  • Step 3

    Scoop into lined muffin tin, pressing mixture firmly into cups. Chill in the fridge for 20 minutes, while you make the cheesecake filling.

Cheesecake filling

  • 1/2 cup plus 2 tablespoons heavy whipping cream
  • 12 ounces softened cream cheese
  • 1/4 cup cane sugar
  • 2 tablespoon powdered sugar
  • 2 tablespoon sour cream
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup guava paste
  • 2 tablespoon water

Cheesecake filling

  • Step 1

    In a bowl, whisk heavy whipping cream until you reach stiff peaks. Set aside.

  • Step 2

    In a separate bowl, combine cream cheese, sugars, sour cream, lemon juice, and vanilla.

  • Step 3

    Fold in half of cream cheese mixture until no streaks remain. Then fold in second half.

  • Step 4

    Scoop evenly into graham cracker crust.

  • Step 5

    Heat guava paste and water in microwave in 20n second intervals until it becomes a jelly like texture.

  • Step 6

    Drop onto cheesecakes, and swirl using a skewer or knife.

  • Step 7

    Chill in fridge for at least six hours, or up to two days.
