Mexican inspired steak and eggs

ingredients

Salsa

  • 3 heirloom tomatoes (Roma will work fine as well!)
  • 3 cloves garlic
  • 1 shallot
  • 1 bunch green onion
  • 1 handful of cilantro (or parsley if you don't like!)
  • 1 lime juiced
  • salt and pepper, to taste (recipe below)
  • 1 teaspoon chili powder
  • 2 tablespoons pickled jalapeño (fresh is fine this is just what I had!)

Method

Salsa

  • Step 1

    Roughly chop tomatoes, garlic, shallot, and green onion (save leafy tops for garnish).

  • Step 2

    Add chopped ingredients to a bowl, with lime juice, salt and pepper **(I start with about a teaspoon of salt, and 1/4 teaspoon of pepper) then adjust at the end.** cilantro (or parsley if you don't like it, that's what I used) , chili powder, jalapeño and toss together.

  • Step 3

    Add ingredients to a food processor (in batches if needed) and pulse until desired level of thickness. (not too thin!) Taste, and adjust salt and pepper/lime juice. Put in fridge until ready to use.

  • Step 4

    If using fresh jalapeño, remove seeds and adjust amount according to heat preference.

Steak/Marinade

  • 1 flank steak
  • 1 lime
  • 1 lemon
  • 1 handful of cilantro (/parsley)
  • 1/4 cup pickled jalapeño juice (plus a few pieces of jalapeño)
  • 1/4 cup white wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 cup avocado oil

Marinade/steak

  • Step 1

    Combine spices/juices together in a bowl.

  • Step 2

    Pat steak dry with paper towel, and transfer to a large ziplock bag, with the marinade. Place in fridge for at least two hours, up to over night.

  • Step 3

    Remove from fridge 30 min' before cooking.

  • Step 4

    Place on a hot grill pan, with avocado oil (oil should be just smoking when steak is placed on.)

  • Step 5

    Cook 3 min' per side, (or to desired cook)

  • Step 6

    Allow to rest equal to cooking time on a wire rack, slice just before serving.

Avocado crema

  • 2 peeled and quartered avocados
  • 2 cloves rough chopped garlic
  • 1 teaspoon salt
  • 2 teaspoons lime juice
  • 1/2 cup sour cream

Avocado crema

  • Step 1

    Combine all ingredients in a food processor. Puree until very smooth.

  • Step 2

    Taste and adjust lime juice/salt.

Assembly.

  • Step 1

    Spread avocado crema out onto bottom of shallow bowl/plate.

  • Step 2

    Top with slices of steak.

  • Step 3

    Add dollops of salsa.

  • Step 4

    **Add eggs cooked to preference!**

  • Step 5

    Finish with flaky salt, parsley/cilanto, green onion, flaky salt and cotija/desired cheese.
