Loaded Potato Dip

"Picture the herby, tangy, decadent toppings of a loaded baked potato... but make it a dip. healthy-ish by swapping sour cream for greek yogurt. Drizzled with a spiced herb oil. Serve with potato chips, or veggies!"

ingredients

  • 1/2 minced shallot
  • 2 cloves minced garlic
  • 1 tablespoon red pepper flakes
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon dried chives (plus more for serving)
  • 1/4 cup avocado oil
  • 1/2 cup or more as needed plain greek yogurt
  • 3 slices cooked bacon
  • 1 tablespoon or more to taste cheddar cheese, grated fine.
  • 1 pinch fresh parsley
  • chips, for serving
  • salt and pepper, to taste

Method

  • Step 1

    Combine shallot, garlic, red pepper flakes, paprika, and chives in a heat safe bowl.

  • Step 2

    Heat avocado oil in a small sauce pan until simmering. (If you're not sure- when you dip the back of a wooden spoon in, it should sizzle)

  • Step 3

    Pour hot oil into bowl over herbs/garlic etc. Set aside until ready to use.

  • Step 4

    Add greek yogurt to your serving dish.

  • Step 5

    Drizzle with desired amount of herb-oil, (you can keep extra in the fridge for about a week!)

  • Step 6

    Chop up your cooked bacon into small pieces, and place onto yogurt. Sprinkle with a tiny bit of salt (not much! bacon is salty) and pepper.

  • Step 7

    Finely grate desired amount of cheddar cheese ontop of yogurt/bacon.

  • Step 8

    Finish with fresh parsley, and more dried (or fresh if you have them) chives.

  • Step 9

    Serve with your favorite potato chips, veggies, or other dipping snack!
