ingredients
- 5 eggs
- 2 chicken tenders (recipe posted previously)
- 2 tablespoons mayonnaise
- 1 teaspoon hot sauce (I like crystal)
- 1 teaspoon dijon mustard
- 1 teaspoon grainy mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon softened salted butter
- 1 teaspoon chives (dried or fresh chopped)
- 1 tablespoon or more as needed hot honey (I like Red Clay)
- 1/8 teaspoon cajun seasoning
- flaky salt, for serving
Method
Step 1
Fill a large pot with water, enough to cover the eggs by 1".
Step 2
Place eggs in pot, and set to boil on stovetop.
Step 3
Once water is boiling, cover pot and let eggs boil/steam for 8-10 minutes.
Step 4
Remove from pot and place immediately in an ice bath.
Step 5
Peel shell from eggs, and slice in half vertically.
Step 6
Carefully scoop cooked yolks into a bowl, saving the whites.
Step 7
Add mayo, hot sauce, mustards, salt & pepper, and butter to yolks. Use hand mixer on low, or whisk together by hand until smooth and fluffy.
Step 8
Scoop yolk carefully back into whites.
Step 9
Cut chicken tenders into bite sized pieces- top each egg with a slice of chicken tender.
Step 10
Drizzle with hot honey, sprinkle with chives, flaky salt, and cajun seasoning (or your favorite seasoning blend)
