ingredients

  • 7 pounds pork shoulder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon avocado oil (or other oil of choice)
  • 1 tablespoon grainy mustard
  • 1/2 cup apple butter
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon worchestire sauce
  • 1 large chopped yellow onion
  • 3 cloves chopped garlic
  • 1/4 cup brown sugar
  • 2 cups dry hard cider
  • 1 small bunch sage
  • 1/2 cup barbecue sauce (I like sweet baby rays)
  • 1/2 cup apple butter
  • buns, for serving
  • coleslaw, for serving

Method

  • Step 1

    Season pork shoulder generously with salt, and pepper.

  • Step 2

    Add avocado oil to crock-pot, and place pork in.

  • Step 3

    Add grainy mustard, paprika, cayenne, thyme, and apple butter. Use hands to rub that mixture all over the pork.

  • Step 4

    Add worchestire sauce, onion, garlic, brown sugar, cider, and drop in sage.

  • Step 5

    Place lid on, and cook on high for 6 hours, until meat easily shreds apart with two forks.

  • Step 6

    Remove pork from liquid, and place into a large bowl.

  • Step 7

    Shred apart with two forks (removing bone, and any especially fatty bits that remain)

  • Step 8

    Mix together apple butter, and barbecue sauce in equal parts.

  • Step 9

    Pour onto shredded pork, and stir to combine.

  • Step 10

    Serve on your favorite buns (mine are by Canyon Gluten Free) topped with coleslaw, mustard, hot honey, any toppings you like.

  • Step 11

    (highly suggest having friends over for this one- it makes a LOT)
