Greenbean casserole (with home made *gluten free* crispy onions)

ingredients
- 1/2 yellow onion
- for frying vegetable oil
- 1 cup buttermilk
- 1/2 cup cornstarch
- 1 teaspoon your favorite seasoning (I used Trader Joe's everything but the leftovers seasoning)
- 1 pound green beans
- 3 tablespoons unsalted butter
- 5 ounces shiitake mushrooms
- 3 cloves minced garlic
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon white pepper
- 1/4 cup dry white wine
- 1/2 cup milk
- 1 cup heavy whipping cream
- 1 tablespoon gluten free flour
Method
Step 1
Cut your onion in half. Thinly slice one half into "C" shapes. Doesn't have to be perfect! (I used only half, but you can use the whole onion, depends how much you want!)
Step 2
Add buttermilk to a bowl, and drop in onion slices, toss to coat.
Step 3
Add cornstarch and seasoning blend to a shallow bowl (or a ziplock bag)
Step 4
Use tongs to remove onion slices from buttermilk, draining off excess. Toss through cornstarch mixture, using tongs or hands to coat. (or shake in bag if using)
Step 5
Warm oil in a heavy bottomed pot on about medium heat. If you have a thermometer, you want the oil around 350. If you don't have a thermometer, dip the end of a wooden spoon or toothpick into the oil. When it sizzles around the wood- you're ready to fry.
Step 6
Drop onions in carefully, in about 3 batches to avoid clumping. Gently stir occasionally to keep them moving.
Step 7
Once golden brown (after about 5 minutes) remove from oil, and place on a baking sheet wit a wire rack to drain excess oil. Sprinkle with salt while still warm.
Step 8
Boil water in a large pot, and drop in your green beans (stems removed)
Step 9
Boil for 2-4 minutes, and transfer quickly to an ice bath. Set aside until ready to use. Preheat oven to 350.
Step 10
In a warmed cast iron skillet, or oven safe pan... Melt butter on medium heat.
Step 11
Add shiitake mushrooms, and give a quick toss to coat. Season with salt, pepper, nutmeg, and white pepper. Let them cook undisturbed for about 3-5 minutes. Once they've got nice color, give them a toss and cook an additional 3-5.
Step 12
Add white wine, and allow the liquid to simmer away. (this will happen pretty quick! maybe 2-4 minutes.
Step 13
Add heavy cream, and milk. Whisk in flour. Reduce heat to medium-low, and simmer to thicken. Stirring frequently.
Step 14
Once cream has thickened (about 3 minutes) Drain green beans from water, and add to cream sauce.
Step 15
Toss to coat well, and transfer to the oven for 20-25 minutes.
Step 16
Top with crispy onions, and serve!
