ingredients

  • 1 1/3 cups Gluten free baking flour
  • 1/2 teaspoons Baking powder
  • 1/8 teaspoons Baking soda
  • 1/2 cup Brown sugar
  • 8 tablespoons Softened butter
  • 1 Egg
  • 1 1/4 tablespoons Vanilla extract
  • 1/2 teaspoons Salt
  • 2 tablespoon Milk (or vegan half&half)

Method

  • Step 1

    Mix together dry ingredients in a bowl. Preheat oven to 325.

  • Step 2

    Whisk egg, and add vanilla. Add to dry ingredients.

  • Step 3

    Add butter, & whisk using hand mixer until combined.

  • Step 4

    Add milk, whisk until dough forms (will be sort of clumpy)

  • Step 5

    Work into ball using hands. Scoop 1tbs. rounds, gently roll to create desired wafer shape.

  • Step 6

    Place on parchment lined baking sheet, bake 15-18 minutes. (Until evenly golden) allow to cool until crisp.
