ingredients
- 4 pieces white fish, such as Cod
- 1 egg white
- 1/2 cup gluten free all purpose flour
- 1 teaspoon baking soda
- 6 ounces gluten free beer
- 1/2 teaspoon garam masala (optional, or use whatever seasoning you like!)
- to season salt and pepper
- neutral oil, to fry
- 2 floury potatoes, such as russett.
- 1 teaspoon olive oil
Method
Step 1
Preheat oven to 350. Cut cleaned potatoes into desired size sticks. You don't have to peel them, but you can!
Step 2
season with salt and pepper, and drizzle with olive oil. Toss together.
Step 3
Place on parchment or foil lined baking tray, with about 1" of space between each fry. Giving space allows them to get crispy, and not steam!
Step 4
Bake for about 15-20 minutes, and turn once. Bake an additional 10-15 minutes, until golden brown and crispy. Season with additional salt, or garlic salt while still warm.
Step 5
Season your fish on both sides with salt and pepper. It's crucial to season the fish prior to coating with batter, so it has flavor of its own!
Step 6
Toss fish through a little gluten free all purpose flour to coat, shaking off excess. (this will allow batter to adhere to fish!)
Step 7
Make your batter by whisking one egg white until stiff peaks form.
Step 8
In a separate bowl, combine flour, baking soda, and garam masala (or other seasoning)
Step 9
Pour in beer, whisking to create a medium pancake batter like consistency.
Step 10
Heat about 1-2" neutral oil in a sort of deep frying pan. (I used my cast iron!)
Step 11
Coat fish in batter, and shallow fry about 5 minutes per side until golden brown and crisp. Give fish a gentle shake when placed in pan, to avoid sticking to the bottom of the pan.
Step 12
Remove from oil, and place on paper towel to absorb excess. Season with salt, serve with fries, and your favorite sauce.
