Gluten free buttermilk biscuits

ingredients

  • 3 cups gluten free baking flour (I like King Arthur measure for measure)
  • 1 1/2 tablespoons baking powder
  • 2 teaspoons kosher salt
  • 1 tablespoon sugar
  • 1 tablespoon dried chives
  • 1 cup buttermilk
  • 1 cup heavy cream
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons melted butter
  • flaky salt, for topping

Method

  • Step 1

    Preheat oven to 375.

  • Step 2

    In a large mixing bowl, combine dry ingredients, and mix in wet ingredients (not the melted butter!) until just combined. (Overmixing will create tough biscuits)

  • Step 3

    Dough will appear slightly shaggy/rough. (you can add a splash more buttermilk if it feels too dry)

  • Step 4

    Transfer to a piece of parchment paper, fold to sandwich between. Roll out to about 1" thickness. (don't go too thin! thicker would be better.)

  • Step 5

    Use circular cookie cutter, or mason jar lid to cut rounds, and transfer to a parchment lined baking sheet.

  • Step 6

    Brush tops with melted butter, and a sprinkle of flaky salt. Bake for 12-15 minutes. Broil on low for the last two if needed to encourage browning.

  • Step 7

    Serve warm, topped with more flaky salt, and with extra butter on the side.
