ingredients

  • 1 (4 ounce) stick butter
  • 6 ounces white chocolate, chopped
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 1/2 cups gluten free baking flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sprinkles, plus more as needed

Method

  • Step 1

    Preheat oven to 350°F.

  • Step 2

    In a large cast iron skillet, melt the butter. Add chopped white chocolate, and stir until melted together.

  • Step 3

    Remove from heat. Add sugars, and vanilla. Whisk together until well combined. Allow to cool slightly. Add 2 well whisked eggs, make sure pan has cooled enough to not scramble the eggs.

  • Step 4

    Stir in baking flour, baking powder, and salt. Fold in sprinkles. (anything but non-pareils will work!)

  • Step 5

    Bake until golden brown, 30-35 minutes. Remove from the oven and allow to cool for 10 minutes.

  • Step 6

    Serve topped with vanilla ice cream and more sprinkles for the ultimate birthday (or "I made it through Monday!") celebration treat.
