Fried chicken

  • 3 boneless skinless chicken thighs
  • 1 pinch of salt and pepper, to taste
  • 1/4 cup pickle juice
  • 1 tablespoon hot sauce
  • 1 cup buttermilk
  • 1/2 cup fine cornmeal
  • 1/2 cup gluten free flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 cup oil, for frying

Method

Fried chicken

  • Step 1

    In a bowl, season chicken thighs with a pinch of salt and pepper. Add pickle juice, hot sauce, and buttermilk. Toss to coat.

  • Step 2

    Cover, and refrigerate for at least an hour, up to overnight. (overnight if you just wanna get cookin' the next day!)

  • Step 3

    While chicken marinates, in a large paper bag... combine flour, seasonings, and cornmeal. Shake to combine.

  • Step 4

    Once chicken has marinated, shake off excess buttermilk and drop directly into paper bag.

  • Step 5

    Shake to coat. Remove, and dredge back through the buttermilk.

  • Step 6

    Place back into the bag, and shake a final time.

  • Step 7

    In a cast iron skillet, heat about 1" of oil.

  • Step 8

    Place chicken in gently, giving a little shake so they don't stick.

  • Step 9

    Cook for about 6 minutes per side... until chicken reaches an internal temperature of 165.

  • Step 10

    Transfer to a wire rack, sprinkle with flaky salt and allow to set before serving.

Garlic herb spaghetti

  • 2 servings uncooked pasta
  • 1 cup cherry tomatoes
  • salt and pepper, To taste
  • 2 tablespoons butter
  • 4 slices chopped pancetta
  • 4 cloves roughly chopped garlic
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped chives
  • 1/4 cup chopped basil
  • 1/4 cup fresh grated parmesan cheese
  • 2 balls burrata

Garlic herb spaghetti

  • Step 1

    Preheat oven to 375. Place tomatoes on a baking sheet, seasoned with salt and pepper. Roast until burst about 15-20 minutes.

  • Step 2

    Cook spaghetti (or noodles) to package instructions. Drain and set aside.

  • Step 3

    In a pan, melt butter. Add pancetta, and cook to crisp.

  • Step 4

    Add garlic, and cook until fragrant only lightly browning garlic.

  • Step 5

    Add noodles, and herbs. Toss to combine.

  • Step 6

    Add parmesan, and toss again.

  • Step 7

    Serve topped with fried chicken and roasted cherry tomatoes. Break burrata into pieces onto of servings.
