ingredients

  • 4 russet potatoes
  • 1 chopped yellow onion
  • 2 tablespoons unsalted butter
  • 1/2 cup sour cream
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon diamond crystal kosher salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 cup shredded parmesan cheese
  • 5 strips bacon, cooked & chopped
  • 1 teaspoon fresh thyme
  • 1/2 cup shredded cheddar cheese
  • sliced green onion, for garnish

Method

  • Step 1

    Preheat oven to 400F. Scrub russet potatoes, and dry well. Place on a baking sheet with a wire rack. Bake for one hour, until fork tender.

  • Step 2

    Bake potatoes for one hour. Meanwhile, being caramelizing onion.

  • Step 3

    Place chopped onion, and butter in a medium-large pot.

  • Step 4

    Cook on medium until browning begins, stirring frequently. Reduce to low, and cook for an additional 25-30 minutes, stirring frequently until reduced, and caramelized.

  • Step 5

    Transfer onion to a bowl, add sour cream, salt and pepper, and garlic powder. Mix together, and chill in the fridge until ready to use.

  • Step 6

    Once potatoes are fork tender, remove from oven and allow to cool until touch safe. (Bring oven temp up to 450)

  • Step 7

    Slice in half, and carefully scoop out insides. (keeping skins in tact)

  • Step 8

    Brush potato halves with oil on both sides, sprinkle with salt and return to oven for 10 minutes per side.

  • Step 9

    Mix together shredded parmesan, cheddar, chopped bacon, and thyme. Scoop into potato shells once crispy.

  • Step 10

    Return to oven for 3-5 minutes until cheeses have melted.

  • Step 11

    Top with caramelized onion mixture, and chopped green onion.
