ingredients

  • 8 ounces chopped white bakers chocolate
  • 1 stick butter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 2 tablespoons penut butter
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/4 cups gluten free baking flour
  • 1/2 cup peanut butter chips
  • 4 tablespoons marshmallow fluff

Method

  • Step 1

    In a large bowl, in 30 second increments... melt butter and white chocolate in microwave. Should easily stir together. Allow to cool slightly. Preheat oven to 350.

  • Step 2

    Add sugars, and beat together until smooth and light. Add peanut butter and whisk to combine.

  • Step 3

    Add eggs one at a time beating about 2 minutes each to fully incorporate.

  • Step 4

    Add vanilla, and salt. Whisk.

  • Step 5

    Add flour, and whisk until just combined.

  • Step 6

    Fold in peanut butter chips. Transfer half of batter to parchment lined baking dish. (I use a rectangular pan).

  • Step 7

    Dollop on marshmallow fluff, and spread out with a spoon. Doesn't have to be perfect or pretty.

  • Step 8

    Cover with remaining batter, and add more marshmallow fluff. Swirl with the end of a spoon.

  • Step 9

    Bake for 20-25 minutes, until toothpick comes out clean.

  • Step 10

    Allow to cool, and slice. Top with flaky salt, and additional fluff if desired.
