Duck prosciutto pizza

ingredients
- 1 pizza crust
- 2 tablespoons butter
- 2 tablespoons flour
- 1/4 teaspoon garlic powder
- 1/8 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1 1/4 cup heavy cream (or whole milk)
- 1/4 cup grated parmesan
- 3 ounces grated gruyere
- 5 ounces grated mozzarella
- 16 slices of duck prosciutto (regular prosciutto is fine too)
- 1/4 cup chopped roasted salted pistachios
- 1 tablespoon chopped fresh chives
- hot honey, for serving
- 11 tablespook minced Shallot
Method
Step 1
Preheat oven to 425/450 (base on pizza crust baking instructions)
Step 2
In a saucepan on medium-low heat (stovetop) melt butter. Whisk in flour.
Step 3
Add garlic powder, salt and pepper. Stream in heavy cream, whisking constantly.
Step 4
When no clumps remain stir in parmesan and turn off heat. Melt parmesan into sauce.
Step 5
Place pizza crust on a pizza stone (or skip if rack baking) and pour sauce onto crust. Use spoon to spread out toward the edges of the crust.
Step 6
Sprinkle on gruyere and mozzarella.
Step 7
Bake for 8-10 minutes (or according to pizza crust instructions)
Step 8
Remove from oven, and slice pizza.
Step 9
Place duck prosciutto slices on each slice of pizza (regular prosciutto or even salami would work great, too.)
Step 10
Sprinkle with chopped pistachios, and fresh chives.
Step 11
Finish with flaky salt, and a little extra pepper. A drizzle of hot honey is highly encouraged.
