ingredients
- 1 stick softened plant based butter (I prefer Country Crock)
- 1 cup white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 3/4 cup apple sauce
- 2/3 cup unsweetened cocoa powder
- 1 1/4 cups gluten free baking flour
- 3/4 cup cashew milk (or preffered milk alternative)
- 1/2 cup vegan semi-sweet chocolate chips
Method
Step 1
Preheat oven to 350.
Step 2
In a large mixing bowl, beat together butter, and sugars until light.
Step 3
Whisk in vanilla and salt.
Step 4
Whisk in baking powder, soda, and apple sauce (this is your egg replacer!)
Step 5
Whisk in cocoa powder.
Step 6
In batches, whisk in flour and cashew milk. (about 1/3 at a time worked best for me!)
Step 7
Spray loaf pan with cooking oil, and dust with additional flour. (this will assist your loaf in rising, as it gives the batter something to climb up!)
Step 8
Bake for 50-60 minutes. Resist the temptation to open the oven! (that will cause sinking)
Step 9
At 50-55 remove from oven and test with toothpick. Return to oven for an additional 5 minutes if needed.
Step 10
Top with flaky sea salt, and allow to cool before slicing.
