Blondies
- 1/2 cup butter
- 8 ounces chopped white bakers chocolate
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 room temperature eggs
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/8 teaspoon cinnamon
- 1 1/4 cups gluten free baking flour

Blondies
Step 1
Preheat oven to 350. Melt together butter and white chocolate.. (20 second intervals in the microwave stirring each time)
Step 2
Add sugars, and whisk until light.
Step 3
Add eggs, one at a time... beating about 2 minutes each.
Step 4
Add vanilla, and then sift in dry ingredients.
Step 5
Dollop in cinnamon sugar mixture, and swirl with spoon.
Step 6
Bake for 20-25 minutes until toothpick comes out clean. Allow to cool completely before frosting.

Cinnamon sugar swirl
- 4 tablespoons melted butter
- 6 tablepoons brown sugar
- 2 tablepoons cinnamon

Step 1
Combine all ingredients in a bowl, and stir to soften sugar granules.

Cream cheese frosting
- 8 ounces softened cream cheese
- 1/4 cup softened butter
- 1 teaspoon vanilla paste or extract
- 1/8 teaspoon salt
- 2 cups powdered sugar
Cream cheese frosting
Step 1
Use hand mixer to combine cream cheese, butter, salt, and vanilla paste or extract. (I like paste, because it leaves behind those pretty vanilla beads!)
Step 2
Add powdered sugar, and whisk to combine. I like to start with 1.5 cups, and add the remaining .5 cup if needed (depending on desired consistency!)
Step 3
Set aside until ready to frost. Do not chill.
